Chef Red and the Pittsburgh Recipe!

This tailgate should be outstanding. Steelers fans aren’t like those girl Browns fans. They will show! Plus, we have the ATL Buc crew coming so Chef Red did it up right. Check out this week’s feature:

Pittsburgh Primanti Burgers


This week we are 2-0 and have the Pittsburgh Steelers coming to visit our home.  When I think about the food in Pittsburgh I think of one thing which is the Primanti Brothers sandwiches.  Primanti Brothers was opened in 1933 and its signature item is a sandwich which consists of grilled meat, a vinegar-based coleslaw, tomato, cheese, and French fries.  Primanti Brothers is a traditional night owl spot after the bars close mainly for their signature sandwiches.  So with the Steelers coming in I feel it is only fair to touch on these great sandwiches.  Instead of using the traditional meats I decided to add a little beer burger to spice it up.  These Pittsburgh Primanti Burgers are super filling so make sure you have plenty to drink before trying them.

Ingredients

8 good hamburger rolls

8 slices of tomato

8 slices of Provolone cheese

Slaw (recipe follows)

Burgers (recipe follows)

1 bag of French Fries (thin cut)

Slaw:

  • 1 medium size head of green cabbage, shredded or finely chopped
  • 1/2 cup sugar
  • 2 teaspoons kosher salt
  • 1/4 teaspoon celery seed
  • 1/4 cup vegetable oil
  • 1/4 cup apple cider vinegar
  • 1 teaspoon freshly ground black pepper

Burgers:

  • 2 pounds ground beef
  • 1 onion, finely chopped
  • 1 egg
  • 6 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1/2 cup beer

Directions

For the slaw combine all ingredients into a bowl and mix well.  Cover and refrigerate overnight for use at the tailgate location.

Cook the fries per the directions on the bag (I know you can follow them) right before you leave for the game.  Store fries in a warmer bag until at the tailgate.  You may need to reheat on the grill for just a few minutes in a metal pan.

Mix the ground beef, onion, egg, garlic, Worcestershire sauce, salt, and pepper in a bowl. Mix in the beer until absorbed by the meat mixture. Form the beef mixture into 8 patties and store until the grill is ready.  Preheat an outdoor grill for medium-high heat and lightly oil the grate.  Cook on the preheated grill until the burgers are cooked to your desired degree of doneness, about 5 minutes per side for well done.  For the last minute add the cheese and melt on the burgers.

To create the burgers start with one of the buns.  Place a handful of fries on the bottom of the bun.  Next place one of the burgers.  Place a slice of tomato next.  Add a scoop of coleslaw on top of the burger.  Finally top the burger with the other half of the bun and enjoy.

*This recipe yields 8 servings.  Make sure you increase all amounts equally when tailgating with more friends.

A lifelong Buccaneers fan that began working in the restaurant industry when he was 16, Chef Red continued this career while growing to love tailgating at the Buccaneers games. Now residing off of Ohio Avenue the tailgate has grown into a special event for every Buccaneers home game. The addition of "Grillaneer" in 2011 which is a 20 foot customer smoker on a dual axel car carrier has grown the selection of food farther than what two hibachi grills can handle. Chef Red tailors his menu for every incoming opponent and tries something new each game. Rather it is hundreds of pounds of pulled pork, ribs, chicken, or even smoked salmon there is always something for everyone. Chef Red makes almost all of his own sauces, rubs, and side dishes with his own spin to please the crowds. Chef Red's motto is "Tailgating with Attitude" which speaks to his love of the Buccaneers and feeding the massive crowds at the tailgate. Chef Red
